Ingredients:
Medium Cucumber, Sliced Thinly 1/2
Sliced White Onions 1/4 Cup
Celery, Peeled And Sliced Thinly On A Bias2 Stalks Flaked Honey-Smoked Salmon 2 Cups
Avocado, Peeled, Pitted, And Sliced 1/2
Minced Tarragon Or Dill 1 Tablespoon
Method:
Dressing:
Light Cream 1/4 Cup
Bottled Horseradish 2 Tablespoons Lemon Juice 2 Tablespoons
Minced Tarragon Or Dill 2 Tablespoons Kosher Salt 1/2 Teaspoon
Freshly Ground Black Pepper 1/4 Teaspoon
For the dressing
Combine all of the ingredients in a bowl and whisk until combined. Set aside.
For the salad
In a bowl, combine the cucumber, onions, celery, flaked salmon, and about Vi cup of the dressing. Toss gently. Then, add the avocado and tarragon and add more dressing if needed.
