Spinach Artichoke Ravioli Bake



This recipe is just the perfect easy dinner


Servings: 10

INGREDIENTS
5 ounces fresh baby spinach, chopped
1 – 16-ounce can artichoke hearts, chopped
¼ cup pesto
2 cups Alfredo sauce
1 – 25-ounce package frozen cheese ravioli
1 cup Italian cheese blend, shredded
Chopped parsley, for garnish (optional)

PREPARATION
Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
In a medium bowl, combine the spinach, artichoke hearts and pesto.
Spread ⅓ of the Alfredo sauce on the bottom of an 11-by-7-inch baking dish. Top with half of the spinach mixture and a layer of half the ravioli.
Repeat the layers once, and finish with the remaining ⅓ of Alfredo sauce on top. Bake for 30 minutes.
Sprinkle the top of the casserole with the Italian cheese blend. Increase the heat to broil and return the baking dish to the oven. Broil for 3 to 5 minutes, or until the cheese just starts to brown.
Garnish with chopped parsley.



Spaghetti Pie



This Spaghetti recipe makes dinner a snap on busy weeknights

INGREDIENTS
1 – 16-ounce package spaghetti
½ cup onion, chopped
2 garlic cloves
1 – 15-ounce can black beans, drained and rinsed
1 cup tomato sauce
1 cup low-fat cottage cheese (or ricotta)
2 tablespoons fresh parsley
3 eggs
3 tablespoons Parmesan cheese
¾ teaspoon salt and pepper
1 – 14-ounce can diced tomatoes
½ cup mozzarella cheese, shredded

 PREPARATION
Cook the spaghetti for about 3 to 4 minutes less than the package instructions recommend, until just al dente.
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Spray a spring form pan with nonstick spray.
Sauté the onions in cooking spray until translucent. Add the garlic and black beans, and sauté.
In a large bowl, whisk together the tomato sauce, cottage cheese, parsley, eggs, Parmesan, and salt and pepper. Once combined, add the diced tomatoes and the cooked onion mixture.
Transfer to sprayed spring form pan. Top with the mozzarella cheese.
Bake for 15 minutes, until the cheese is bubbly.

Chilli Garlic Prawns



Juicy, succulent prawns are a delicacy from the word go.

INGREDIENTS
100g butter, chopped
2 tablespoons olive oil
3 garlic cloves, thinly sliced
3 red cayenne chillies, thinly sliced
1kg medium green king prawns, peeled (tails intact), deveined
1 medium tomato, deseeded, finely chopped
2 tablespoons chopped fresh flat-leaf parsley leaves
Lemon wedges, to serve

PREPARATION
Melt butter and oil in a large, deep frying pan over medium-high heat. Add garlic and chili. Cook, stirring, for 1 minute or until fragrant. Add prawns. Cook, stirring occasionally, for 5 to 7 minutes or until prawns is pink.
Stir in tomato and parsley. Serve with lemon wedges.

Bake Chicken Tomato Pasta

A quick and easy chicken pasta dish

Total Time: 38 minute

INGREDIENTS
1 tablespoon olive oil
1 pound boneless skinless chicken breast, cut into bite-size pieces
2 cloves garlic, minced
One 14-1/2-ounce can diced tomatoes
14 ounces spaghetti sauce
2 ounces (1/4 of 8-ounce package) cream cheese
One 9-ounce package fresh spinach leaves, chopped
1-1/2 cups multigrain penne pasta, cooked according to package directions (or your preferred type of penne pasta)
1 cup shredded mozzarella cheese
2 tablespoons grated Parmesan cheese

PREPARATION
Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius)
Heat the olive oil in a large skillet over medium-high heat.
Add the chicken and brown on both sides, then remove from the pan. It’s ok if it’s not quite cooked-through because it will be baked later
Add the garlic and sauté for 1 minute, then add the diced tomatoes and spaghetti sauce.
Add the cream cheese and stir to melt into the sauce.
Add the spinach and stir to coat in the sauce
Add the browned chicken back in and add the pasta. Stir and coat with the sauce.
Spoon everything into a 2-quart casserole or 8-inch square baking dish. Top with the mozzarella and Parmesan.

Balsamic Chicken


It's fun to get together and have something good to eat at least once a day

INGREDIENTS
6 bone in skin on chicken thighs
3/4 cup chicken broth
1/2 cup balsamic vinegar
1 medium yellow onion, halved and sliced
3-5 cloves garlic, depending on personal taste, crushed
1 teaspoon dried rosemary
1/2 teaspoon red pepper flakes to garnish:
balsamic glaze to taste (either store bought or made my simmering 1 cup of balsamic vinegar on the stove for 10 minutes on medium low heat.)
Small bunch fresh basil, sliced thin
 
PREPARATION
Place all of the ingredients except for the garnishes in the crock pot. Cook on low for 25 minutes
Serve drizzled with balsamic glaze and topped with sliced basil.

Baked Tomatoes Parmesan

INGREDIENTS
6 Tomatoes
2 Table spoon Olive oil, for brushing
Salt and pepper, to taste
1pinch Dried oregano, to taste
¼ cup Parmesan cheese, shaved or shredded
6 Fresh basil leaves for garnish

PREPARATION
1. Preheat your oven to 400 degrees Fahrenheit. Line a sheet pan with parchment paper.
2. Slice the tomatoes into thirds. Place the slices on the parchment-lined baking sheet.
3. Brush the tomatoes with olive oil; Season with the salt, pepper and dried oregano.
Top with the shaved Parmesan cheese.
