Oven Roasted Rack of Lamb




Intensely flavored lamb is easy to make  



Servings: 1

Ingredients:
Butter Prints Unsalted Wrapped ½  tea spoon melted
Mustard Dijon ¼ tea spoon
Basil ½  pinch chopped
Thyme ½ pinch chopped
Panko 1 tbl spoon
Potato Gratin 30 gms
Ratatouille 30 gms
Rosemary 1 kali sprigs

Preparation Method:

Season the lamb rack with salt and pepper and sear on the griddle.
Brush the mustard onto the lamb, mix breadcrumbs with the herbs and mix in the left over mustard and melted butter. Place the bread crumbs on the lamb rack.
Place on a baking tray and bake in a 375 degrees oven.
Till lamb is just under cooked and the breadcrumbs are lightly browned.
Rest for 10 minutes before serving.
Drizzle a few drips of mint oil into the sauce.
Cut the potato in the correct shape, place the ratatouille on the plate, drizzle the sauce around and carve the lamb and place onto the dish.
Garnish the potato with the rosemary sprig.
